“Behold batch 2 of J.J. Corry’s The Gael Irish whiskey, built using a blend of 60% malt and 40% grain, aged in a combo of ex-bourbon and sherry casks. Crafted by the Chapel Gate whiskey bonders, this expression is meant to serve as a mission statement of sorts – an example of what the team is aiming for when its own whiskey comes of age. If this is the road they’re heading down, there is some good whiskey coming our way!” -Master of Malt
Tasting Note by The Chaps at Master of Malt
Nose: Sugary shortbread, peaches and cream, quite grassy at points.
Palate: Lemon drizzle cake, honeycomb, softly savoury notes of rye bread and thyme in the background.
Finish: Hazelnut spread, apricot yogurt and mince pie filling.
